Scarlet Ibis Rum shows evidence of its 3-5 years in small oak casks by its color which is between pale straw to light honey. After warmed slightly in my glass the nose reveals a fairly tame amount of alcohol considering the 98 proof. Delicate aromas of brown sugar and dried fruit blend well with the alcohol that is evident but not as dominate as you’d expect. Overall a pleasant nose. First sip confirms the proof with warmth up front. It has a medium body and slightly sweet flavors with a hint of oak and allspice giving way to an unapologetic bold, warm, and dry finish.
Anecdotal Notes
I discovered The Scarlet Ibis at my local liquor store. The bottle intrigued me so I had to have it. I found out later that the rum was originally very limited and imported for one of New York’s premier cocktail bars, Death & Co. Since then it’s gained popularity and is now available in a few more places including Oregon, New York, California, and Washington D.C.
Molasses was distilled in copper pot stills and aged in small white oak barrels by Caroni Distillers Ltd. They no longer distill or bottle rum but they sell the remaining stocks of their aged rum. In Austria the final production occurs. The clear bottle is tall and round with a long neck. The label design is by Tim Tomkinson of Broklyn NY and is printed digitally with his Ibis in the background on the pale yellow label. The closure device is a synthetic ribbed cork with oak top. I’ve not seen one like it.
Taster’s Opinion
Roger - The Scarlet Ibis Trinidad Rum is unusual and good rum for mixing where you desire higher proof rum. It falls just short of a traditionally over proof rum from an alcohol content. It really isn’t meant to be enjoyed neat but if you like to sip higher proof rums it’s surprisingly well-mannered. I enjoyed it neat and look forward to trying it in many cocktails. It isn’t going to be around long so get it where you can.
